Recipe: Sushi Bowl

This is one that I was excited to try out because it was a totally new flavor profile that I had not totally experienced before. Sure, I've had seaweed, I love sushi, but this was still an interesting take. One that admittedly feels like it has a little bit of a learning curve on the taste buds, I overall definitely enjoyed this dish! Per usual, inspired from my Real Plan for the week. The following recipe was originally adapted from this one. 

Serves 2 or 1+ leftovers

Ingredients

••1/2 bag riced cauliflower (I find mine at Trader Joes)
••1 onion
••couple cloves of garlic
••2 tbsps coconut oil
••coarse sea salt
••ground black pepper
••small handful pacific wakame
••black or white sesame seeds
••2 filets salmon
••1 avocado
••small bunch green onions
••1 orange
••1/2 lemon
••1 tbsp fish sauce
••1 tsp red wine vinegar

Procedure

1. Heat a pan over medium heat, add 1 tbsp coconut oil
2. chop the onion and mince the garlic, add to pan once warm, stir occaisionally. Looking for translucent color in onions.
3. Add 1/2 bag cauliflower rice and cook 4-5 minutes
4. Season with salt and pepper
5. If your wakame did not come toasted (the package will say if so), toast it in a medium-hot skillet for a few minutes. Do the same with the sesame seeds. Set aside.
6. Melt the coconut oil in a skillet over medium high heat.
7. 
Season the salmon with sea salt and pepper.
8. Cook the salmon by pan searing for 3-4 minutes each side or until cooked to your desired level of doneness or cook on your grill!
9. While the salmon is cooking, slice the avocado and chop green onions.
10. Pull about salmon into pieces to sprinkle over your "bowl"
11. 
Zest and juice the orange and the lemon, then ombine the orange juice, lemon juice, fish sauce, vinegar, lemon and orange zests.
12. When the cauliflower rice is done, stir in 1/3 cup of the dressing and add more to taste.
13. Scoop the cauliflower rice into individual bowls and top with the toasted nori, green onions, salmon, avocado slices, and a sprinkling of sesame seeds. Take a couple of deep breaths before your meal to get you into that relax+digest mode and enjoy your meal whole heartedly!
