I've been eating the same breakfast for over a year now. Pretty much every. single. day. You don't even have to say anything, I don't even understand how I do it sometimes. I am definitely the type of person who likes to switch things up, try new things, etc. but I have found a breakfast that is delicious, nutritious, and keeps me full alllll the way through lunch. Which is ideal. 'Cause you know, less snacking and more nutrients always makes for a healthy, happy body.

I never grate my potatoes anymore, I always chop them up real small and I've taken a liking to adding in bell peppers and have moved away from incorporating a bunch of other root veggies - something that I don't necessarily like, but often times I will now plate this classic breakfast dish over a pile of greens, which kind of makes up for it, right? I'd say so.
